I’ve been trying to eat healthier the last couple of months, and I’ve pretty much cut out most sugary foods (except from fruit of course). The idea is, to loose a couple of stone before the wedding in July. I’ve already lost 1 stone – so it’s going well!
One of the main changes has actually been eating breakfast, as I’ve always been one of those people who would rather skip breakfast, if it means an extra 30 minutes in bed. But actually, having breakfast makes a big difference, and one of the treats we have twice a week is a big healthy breakfast smoothie.
Pad (my fiancé) is the one who makes it – so I can’t really take credit, but I wanted to share it anyway because it’s delicious. It’s seriously yum, not too expensive (I hate it when you read a recipe and it’s like each ingredient is going to cost you £5).
So this is what you’ll need (per smoothie) so just times it by two if you’re making one for someone else as well:
- cup of almond milk
- 2 large spoonfuls of greek yoghurt
- 1 limes (for the juice)
- 1/2 avocado
- handful a bowl of frozen blueberries and handful of frozen raspberries
- big spoonful of honey
Tip: You can also use fresh berries, but the frozen ones are WAY cheaper, and will last later on into the week, so you can make another batch with leftover stuff.
The recipe is pretty easy, basically just pop everything into your blender in the following order:
Almond milk, yoghurt, berries, avocado, lime juice, honey.
And then blitz it up! I’d recommend blitzing it up for longer than you think is necessary, just to get those seeds and fruit chunks properly smoothie-d.
As with anything that’s going into a smoothie, it’s always best to cut everything up small, so it blends easier. The berries are pretty small anyway, but definitely make sure you’ve cut up the avocado too.
This is what it’ll look like before you blend them…
And then BLEND!!
Tip: If you’re not a sweet-tooth, then use less honey, and add more lime. It’s tastes a bit more zingy, rather than sweet.
